Quick and Easy Summer Snacks | Chocolate Banana Smoothies & Protein Packed Peanut Butter Cookies

Summer is here and we have a jam packed schedule with all kinds of fun activities. The zoo, aquarium, pool and lots of family road trips. When it comes to food and eating, I really try hard to make sure we have a balanced diet that doesn’t include the drive-thru for every meal. Take A Pizza My Heart Now Baby

I am all about easy meals we can enjoy together as a family that are still fresh and not processed. Last week we were in need of a fun family date, but instead of going out, we stayed home and made pizzas together. We made two different kinds all with fresh ingredients. I didn’t make the dough, but you can find the recipe to do so here. Sometimes time isn’t always on our side, so I’ll usually pick some up from the bakery section at Publix. They have great dough, made fresh every day. We decided to do a traditional margherita style pizza and a pepperoni pizza with fresh pepperoni from the deli (let me tell ya, it totally makes a difference). I used to buy the prepackaged pepperonis, but buying them sliced from the deli is so much better. Cove had a great time helping me make the pizzas. The Wild Way | Tuscan Tuna Sandwich

I’ve always loved a good sandwich. We ate them a lot growing up. It was probably because we were a huge bread household. Good bread makes every meal better. Since it’s officially picnic weather, we decided to cook up some Tuscan Tuna Sandwiches for a quick and easy meal. Sometimes you just need to upgrade your standard sandwiches. I prefer canned Tuna in olive oil because it honestly has more flavor than tuna in water. Gingerbread Baking

After a busy Saturday this past weekend, we put on our pajamas and decided to bake and decorate some gingerbread men together. Foodstirs had sent me this amazing kit with all organic and non GMO mixes. This helped me not feel quiet as guilty about indulging in all the deliciousness. Cove was definitely in the Christmas spirit. He was even pulling out the baking pans and giggled every time we turned on the KitchenAid Mixer. I have never been a phenomenal baker. I like to cook because you can experiment and don’t always have to be precise. But baking is a whole different playing field and you have to be super exact with all your ingredients. It helped to have the instructions so straight forward and there not be so many ingredients to work with. They turned out super delicious (no thanks to me), and the organic vanilla icing was my favorite. Decorating cookies is definitely a lot of fun as a family. Although last year was one of the best Christmases because we became a family of three, it also felt like we skipped over everything due to our newborn fatigue and the fact it was almost 80 degrees here. Now that we have a little boy walking around, I am so excited for this year’s festivities. Everything seems more magical when you are experiencing it for the first time with someone. Cove now points at the tree when we ask him where the ‘Christmas’ tree is, and whispers when we get close to the lights like he is experiencing something magical. It might be the fact I have an almost one year old, that I am curled up on the couch with the lights twinkling behind my coffee cup or that I’m watching the Gilmore Girls revival, but I am just so sentimental and nostalgic right now over the holidays. Meal Planning | Summer Recipes

Since we had Cove, I have tried to put more of an emphasis on cooking clean and making sure we have plenty of healthy options at the house. This is especially true now that he is eating what we eat. Dinner used to be very unorganized or last minute, leaving us eating out more and eating food that made us feel like sloths afterwards.
