Carne Asada Tacos | Fresh Corn Salad and Pico de Gallo with ALDI

*This post is sponsored by ALDI. All opinions are my own.  It’s officially summer, and that means the season of cookouts and patio meals is upon us! My favorite. I am always coming up with excuses to make tacos and fun colorful meals. We would probably eat tacos multiple times a week if Ian would let me. I try to refrain or at least change them up if I plan on making them. This past week, I was at ALDI and there were so many great veggies on sale. I decided to make Carne Asada Tacos with a fun and fresh corn salad to go with it. I normally make Mexican street corn, but I wanted to try to make something a bit lighter since it was so warm out. This meal was so easy to whip up, so I didn’t have to worry about being in the kitchen all afternoon and could enjoy the sunshine. Plus… -LEFTOVERS. I just wanted to take a minute to talk about my shopping experience at ALDI. We just had a new one open up about…

LBD Summer Edition

Hey, friends! I hope you had an amazing Fourth of July weekend. We kept it pretty chill around here and just watched some fireworks and grilled out. Cove was obsessed with the sparklers and had a meltdown when they were all out burnt out, ha. I’ve never been one to follow “style” rules – white in summer, black in winter. I typically just wear whatever color I want, no matter what time of year, and try to coordinate it appropriately. Because black looks so good when you have a nice tan. I personally think little black dresses are appropriate year round and make for an easy date night outfit. The dress I’m wearing above (linked below) is made from super lightweight material and has pockets. If, you aren’t a fan of black in the summer, they also have it in white and yellow. I paired it with these shoes, which I mentioned last week. They are so comfortable, and go with everything. They’re also 20% off right now. I wore them with a pair of distressed jeans and a tee…

Thoughts on Things: Managing Time, Sand and a Few of My Current Favorites

I normally feel like I am pretty good at managing time. I’m type A and make lists for everything. It’s probably a little OCD, but as of late, I’ve really been struggling. It feels like the days go by so fast and my lists never get done. I try to be really intentional about my time with family, so some things definitely get put on the back burner, but it still feels like time is moving way to fast to completely everything I need to. I would love some suggestions for those of you who manage a bunch of different things like jobs, kids, family and other priorities, and how you do it without letting things slip through the cracks. Hoping it’s just a season, because I hate laying my head on the pillow knowing that the list keeps growing. When we took the above pictures, Cove was having a big issue with the sand. He loves the water, but he’s really funny about textures. As soon as it got in his sandals he had a major melt-down and we had…

5 Tips for Traveling like a Local vs a Tourist this Summer

Summer is just around the corner and I have been counting down the days for our summer trips. We have an excursion to cross through the Canadian Rockies and a few beach vacations this summer. I love having a trip to look forward to, even if it’s just a weekend getaway. When I think back to when Ian and I took our first trip together five years ago, I have to laugh about how much we’ve learned about traveling since then. Not to say we know a great deal, but we have come along way from those tourists carrying our rolling luggage through the cobblestone streets of Italy. We’ve learned you can go on vacation to see and experience everything a place and culture has to offer, or you can stay in your comfort zone, only visiting tourist sites and not truly taking in much at all. In our opinion though, there are really two kinds of trips: Vacations and Expeditions. Vacations are where you visit somewhere with the intention to relax somewhere beautiful, take your time and breath. Expeditions are when you visit somewhere with…

Thoughts on Things | Our Country, Telanti Gelato and Maker’s Market

1.  My heart has been so heavy lately with the events that have occurred in our nation. Broken for many brothers and sisters who fear for their lives. Broken for the world my son will grow up in. Broken for the darkness that seems so loud. But, there is a beautiful promise and hope we have. Hope in His word, His life and His love. 2 Chronicles – “if my people who are called by my name humble themselves, and pray and seek my face and turn from their wicked ways, then I will hear from heaven and will forgive their sin and heal their land.” May we humble ourselves. May we love our brothers and sisters. May God heal our land. 2. I’ve recently tried some fun summer recipes and I am no chef by any means, but I have really enjoyed coming up with healthy and fun recipes for our family. I am going to share some of my favorites with you all soon! But in the meantime, if you have something yummy, light and healthy you love…

On Summer Time

With all this warm weather and long sunny days, we’re on summer time. The days go by so fast with little ones, and I hope that I remember every single moment of this time when he’s all grown up. I’ve been working on keeping quick notes on my phone of things and mental moments or pictures that I want to remember forever. They are just ordinary days or moments, but to me, they are the things I thank God for every night. We’re up at 7 am every day and ready for breakfast and a full day of adventures. Cove has just started on solids, and LOVES them. We have only tried a few different types of food, but so far, we haven’t found anything he doesn’t like. Every time he takes a bite, he makes a sweet little hum and grins.  After our morning nap, were usually at the pool or hanging out at the park with our friends. He’s not swimming yet, but he loves to splash around and watch the water move. Our neighborhood pool has a…

Beach Bag Essentials

We’re heading to the beach! So in honor of our trip, I wanted to share my beach bag essentials. 1. The floppy beach hat. Everyone needs a light-weight beach hat to shade their face from the rays on the beach.  You can find a similar one here. 2. The loudest water-proof bluetooth speaker. Everyone knows that the beach is better with some good tunes. The Braven BRV-1 has to be the best music player out there. 3. Gold rimmed aviators. Keep your eyes protected with a timeless pair of shades. You can purchase a pair of these Ray Bans here, or if you are like me and Ian, you can opt for the cheaper pair here because they will more than likely get left somewhere on the trip. 4. The comfy beach cover up. I am all for an easy breezy cover up and this Roxy cover up is a perfect fit for any style suit to go under. Your can find it here. And for more great cover ups, check out Roxy’s website. 5. A new wardrobe for your phone. This J.Crew gold flake cork is the…
