I am all about easy meals we can enjoy together as a family that are still fresh and not processed. Last week we were in need of a fun family date, but instead of going out, we stayed home and made pizzas together. We made two different kinds all with fresh ingredients. I didn’t make the dough, but you can find the recipe to do so here. Sometimes time isn’t always on our side, so I’ll usually pick some up from the bakery section at Publix. They have great dough, made fresh every day. We decided to do a traditional margherita style pizza and a pepperoni pizza with fresh pepperoni from the deli (let me tell ya, it totally makes a difference). I used to buy the prepackaged pepperonis, but buying them sliced from the deli is so much better.
Cove had a great time helping me make the pizzas. I thought he would really love smashing the dough, but he preferred to eat and spread the cheese way more. This Complete Grate & Slice Set from OXO was so helpful for shredding our fresh mozzarella for the margherita pizza. I love the different grating options it has and how its not hard on your hands when you are trying to hold the cheese (and saving my fingertips from the sharp grate). We also used this Non-Stick Pro Pizza Pan for even baking and this 4″ Pizza Wheel that helps ensure your pans don’t get damaged when slicing your delicious pizza.
After our pizzas finished baking, we headed out to the back deck to enjoy the sunset while we ate. It was a great at-home family date night and we’ll definitely be doing it again since Ian and Cove love pizza so much and we got to make it all together. I’m posting the toppings we used for both pizzas below if you are interested.

Margherita Style

  • 2-3 Fresh Roma tomatoes sliced thinly
  • 2-3 fresh garlic cloves, minced with a garlic press
  • 1 teaspoon extra virgin olive oil, plus more for drizzling
  • Pinch of Salt and Pepper for seasoning
  • 2 – 3 tablespoons finely grated parmesan cheese
  • Fresh mozzarella cheese, cut into thin slices around the size of the tomatoes
  • 5 – 6 large fresh basil leaves
  • Crushed dried red pepper flakes

Traditional Pepperoni Pizza

  • Pasta Sauce, you can make your own using this recipe here. Or if you’re in a hurry I prefer this one
  • 2-3 fresh garlic cloves, minced with a garlic press
  • 1/4 pound of thinly sliced Boars Head Pepperonis from the deli
  • 1 1/2-2 cups of shredded fresh mozzarella cheese
