Current Favorite Fall Meals
Now that Ian has completed Whole30 and I am eating regular food besides bread, I have loved putting together some fall meals for our family. A few of you have mentioned on Instagram you like seeing what we are eating and some of the recipes we come up with, so I thought I would start sharing some of those with you. I will share our original recipes in separate posts so they are easier to find and the ones I’ve found elsewhere in a little list here and there. For now, here are the ones we have tried lately and loved.
- Barbeque Chicken Quinoa Casserole
- Roasted New Potato, Lentil and Kale Salad with Lemon Caper Dressing – I am obsessed with anything lemon caper, and this was healthier than pasta. I did grill some chicken for Ian to eat with it.
- Buffalo Chicken Zucchini Boats – I often don’t use ground chicken and just shred it. I’ll also add some cream cheese and sour cream to the mix if I am really feeling crazy.
- Tomato Kale Parmesan Baked Eggs – For this one, I use whatever veggies we have leftover for the week and I will use other kinds of cheeses based on what I have and just throw them in the skillet and bake them.
Balance in Decorating
We just started piecing together the nursery for our littlest man, and I have had such a hard time balancing comfort and practicality with designs I really like. That sounds terrible because it’s a nursery, but it should all be comfy cozy, right?
As someone who spends a great deal of time in my kid’s rooms, I want them to be a space I love too. We’ve already worked together for the color pallet and I am obsessed with it. Now I am trying to find a chair that’s comfy enough to curl up in, but not a rocker / glider, so we can use it elsewhere in our house when he grows out of it. I want it to be more adult-like in case he wants to keep it in there for reading too. If you have any suggestions, I would love to hear them! I can’t wait to share more of the design and layout with you soon!
As you can see from the pictures above, it’s finally chilly enough here in the south to break out a cardigan without sweating. I’ve actually been buying and pulling out a lot of cardigans lately because I feel like I can use them after pregnancy and they are easy to layer and style with all sorts of outfits. This cardigan jacket is from Chicwish and I love the color of it because it’s so versatile.
It was incredibly windy and rainy the morning we took these. Ian and I had gone out to breakfast before running to Home Depot, and my hair was being whipped around all over the place. I guess you can’t always have great hair days right? You win some, you lose some. You can see the links to the rest of the outfit and this $13 chambray top below.
I also wanted to say thank you to all of you who answered the little poll I had on Instagram last week. So many of you reached out with encouraging comments and shared what you loved and didn’t love, so I hope to base my content moving forward on more of what you love while always staying true to myself.
